The partial hydrolysis of starch slurry by acid or enzyme gives an end product which is commonly known as Liquid Glucose (Sweetose), Corn Syrup or Glucose. Chemically, Liquid Glucose is a mixture of the entire spectrum of carbohydrate molecules derived by breaking the long chained molecules of polysaccharides contained in starch slurry. By adjusting the content of the ingredients, Liquid Glucose of various DE (Dextrose Equivalent) can be obtained for varied end uses.Liquid Glucose (sweetose) is a clear, colourless, viscous solution making it compatible with the physical properties desired in the end products Chemically, Liquid Glucose has functional properties such as high fermentability, viscosity, humectancy - hygroscopicity, sweetness, colligative properties and its role in Maillard''s reaction.

Application:

  • A food technologist will use it to control crystallisation, body appearance, sweetness, osmotic pressure and as a '' preservative in hard boiled candies, jams and jellies.
  • A baker will ferment it with yeast for raising the product. A dairyman will add it to icecream and for better melt down body and mouthfeel and to replace the expensive milk SNF.
  • A chemical engineer will find the use of liquid glucose as a raw material for GLUCONIC ACID, KOJIC ACID and CITRIC ACID.
  • A pharmacist will add liquid glucose in cough syrup and vitamin based tonics and as base of artificial honey. He also uses it as a granulating agent and for tablet coating.
  • A tobacco specialist will use liquid glucose in curing and imparting flavour in tobacco.
  • A tanner will use Liquid Glucose as a weighting material and pliability of leather. He will also use it to precipitate chrome into the body of the leather due to its reducing action. He will also add it to shoe polish to prevent it from caking and to help it to give a better and quicker shine.

Diverse uses of starch make it a very versatile product. Maize or Corn Starch is a typical cereal starch with distinctly low protein and ash contents. Its carbohydrate content of high purity makes it of use in several industries.

Starch occurs in nature in many ways. Maize contains about 66% of starch which can be separated from other ingredients by various processes such as steeping, grinding, purifying and drying. The physico-chemical and functional properties of starch exhibit a wide variation with slight change in the production parameters. One of the important properties is of the viscosity of starch slurry. Normally, starch has near neutral PH. With an increase in the PH, viscosity of starch tends to show an increase, thus making it possible to have diverse uses. This is commonly known as High Viscosity Starch and is used in the textile industry for sizing.

Applications:

  • A Textile Engineer finds it suitable for all types of clothes and yarns as it offers a wide titration of parameters such as viscosity, binding strength and its compatibility with thermoplastic and thermosetting resins for a permanent inish and back filling. Two Stereo Isomers of the Aldexho sugars are known as Glucose, only one of which is Bio-Logically active. This form is often reffered to as Dextrose Monohydrate or especially in the food industry as simply Dextrose. It usually obtained by the hydrolysis of starch and contains one molecule of water of hydration.

Sorbitol liquid (70 %) hardly reacts to fluctuations in environmental humidity. This makes sorbitol liquid a good humectant (water stabilizer). This makes the use of sorbitol economical. The non-volatile nature of sorbitol liquid also makes it useful either alone or in combination with glycerol, in textile dressing, dyeing and printing. To summarise the principal advantages which sorbitol exhibits over other polyols are: Sorbitol gives up water very slowly to dry atmosphere. Sorbitol takes up water very slowly from a humid atmosphere.
